Muffin Recipe

1 c. old fashioned oatmeal
1 c. kefir or yogurt
1 lg. egg
1 tsp. vanilla
12 tbsp. flax seed or 4 tsp. butter
1 tsp. baking soda
1 tsp. cinnamon
1/2 c. almond milk, unsweetened
3/4 c. whole wheat flour
12 tsp. non-sugar sweetener
dried/frozen fruit
nuts

Spray 12 (3 inch) muffin cups w/ non-stick spray.

Preheat oven to 375 degrees F.

Mix dry ingredients and wet ingredients separately.

Combine, add fruit/nuts, mix well.

Bake 15-20 minutes, remove, and let cool 15 minutes.
